High growth speaker series: Katherine Sampson on growth by strategic alliances

Katherine Sampson is the owner of Hello Sam Burger Cafe, and founder of Healthy Habits.


As a woman who aspired to be a stay-at-home mum with two children under three, Katherine Sampson now leads Australia's first national sandwich bar brand, Healthy Habits, which is one of the fastest growing franchise operations in the country. In January 2008, BRW recognised Healthy Habits as the 4th fastest growing franchise group in Australia. In April 2008, it was again recognised by BRW as the 5th fast starter company in Australia.

In 2007, Katherine won the My Business Magazine overall Excellence Award and was a finalist in the Veuve Clicquot International Women's Awards. She has also been a finalist for the Telstra Business Women's Awards in 2002, 2005 and 2006. Katherine is also a finalist for the Ernst & Young Entrepreneur of the Year Awards 2008.

Katherine Sampson is the Founder of Australia’s largest and fastest growing sandwich franchise, Healthy Habits. 

Establishing her first sandwich bar in 1992, Katherine has expanded her business to 35 stores throughout Victoria, ACT, New South Wales & Queensland.  An exciting new store in Christchurch New Zealand is due to open in May 2011 which is the first step towards international expansion.

Her amazing business success had humble beginnings as Katherine, aged 27 and a single parent with two small children, dared to take the plunge and buy her first business, when a relative decided to sell their sandwich bar. 

Seven years later she owned and operated four businesses and in 2004 decided to forge ahead to establish a unique franchise business and take a major bite out of the sandwich market in Australia, which had no dominant brand leader.

Since then the popular and recognisable Healthy Habits brand has grown in terms of profitability, market share and prestige, which has greatly enhanced Katherine’s business acumen and experience.

Most recently, Katherine sold an 80% share of the business to the Dymocks Group of Companies. This provided the infrastructure and investment needed to assist in the expansion of the brand across Australia and overseas.

About the series

The High Growth Speaker Series is dedicated to the strategic, tactical and psychological development of high growth entrepreneurs. Grounded in cutting edge entrepreneurship research and science, the series is designed and hosted by RMIT Lecturer and high growth entrepreneur, Lauren Rielly. 

  • RMIT’s Global Entrepreneurship students receive a closed one hour lecture at 5.30pm each Thursday. 
  • High growth speakers take the theatre stage at 6.30pm to share their story, wisdom and action steps. Each event in the Speaker Series has been made open to the public, for the first 50 people to RSVP. 
  • 7.30pm kicks off the entrepreneurship social event at Oxford Scholar Hotel.
